Speedy Brownies
2 Cups sugar
1 3/4 Cups All-purpose flour
1/2 Cup baking cocoa
1 teaspoon salt
5 eggs
1 Cup oil(the recipe says vegetable oil, but we use coconut oil)
1 teaspoon vanilla extract
1 Cup(6 ounces) semisweet chocolate chips
1. In a mixing bowl, combine the first seven ingredients;beat until smooth.
2. Pour into a greased(we also flour it) 9" by 13" pan.
3. Sprinkle with chocolate chips.
4. Bake at 350 degrees for 30 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.

I feel like I should go make brownies. Except that it's nine o'clock at night.

UHMMMM these look *so* good. If I could eat wheat/sugar I would be making these pronto. As it is, I will have to drool over the pictures (which make me feel like I'm actually smelling the chocolate-y-ness, btw) and dream of the day I can make a batch. ;D

Thanks Beth! My aunt has a recipe for gluten free brownies that she makes using a homemadegluten free flour mix. It's really good, or at least I think it is, I haven't had them in a while, but I think the ones I had were her gluten free version. I can post it if you would like. :)
