Recipe>> Brownie Chocolate Chip Cheesecake


As I promised, here is the recipe for, in my opinion, one of the best cheesecakes ever. :)

Brownie Chocolate Chip Cheesecake

1 (9.8oz or 21.5 oz) package fudge brownie mix
3 (8oz) packages cream cheese, softened
3 eggs
1 (14oz) can sweetened condensed milk
2 teaspoons vanilla extract
1/2 cup mini chocolate chips

Directions

1. Preheat oven to 350° F. Grease bottom only of 9-inch springform pan.

2. Prepare brownie mix as directed for chewy brownies. Spread evenly into prepared pan. Bake for 35 minutes, or until set.

Note: The brownie always overbakes when we make this so this time we followed to instructions on the brownie box( in our case 350° F for glass and metal pans and 325° F for dark coated pans) so we baked it for 25 minutes at 325°F  and it worked out perfectly.

3. Meanwhile, in a larger mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk.

4. Add eggs and vanilla. Pour in prepared pan.

5. Pour into prepared pan. Reduce over temp to 300° F.

6. Bake 50 minutes or until center is set. To test for doneness, stick a clean butter knife in the center of the cheesecake. If the knife comes out clean, your cheesecake is done. Melted chocolate chips on your knife don't count. Only the cheesecake part counts. ;)

7. Cool.

9. Chill thoroughly. Remove side of springform pan.

10. Serve and enjoy.*


*Serving doesn't necessarily sharing. Although your friends and family would probably be happier with you if you share it with them. ;)

Let the Christmas Baking Begin!!!!




















On Thursday, we decided that, since we hadn't done any Christmas baking, and very little Christmas shopping, we should probably get started. :)
Since we needed some cookies to send with a Christmas package to my grandparents, Grace and I whipped up a batch of sugar cookies. Some of the decorations didn't turned out as we had planned because of our lack of some supplies and my lack of cookie decorating talent, but they still taste just fine. (Just ask my dad. He ate 4 out of the 6 that we didn't send. I only told him he could have one. :) )

The Best Things Always End too Soon...

The days following the midnight premiere including much sleeping and discussion about events in the movie. They also consisted of lying around on couches and watching BBC shows such as Sherlock Holmes and Robin Hood. :)

We had loads of good food, and some of it was even themed. Themed food included: Fish and Chips, Seedcakes with Beorn's honey, Scones, Apple Tarts with Raspberry Jam, and Po-ta-to soup(Boil 'em, Mash 'em, Stick em' in a stew) ;).

I always feel like get togethers with friends end too soon, and I felt the same way with this one. I want to have another and much longer one. It feels like it has been so long since the party ended, but in reality, it has only been a week. If you would like to read some other posts on our party, here are some links.
